4 medium boneless, skinless chicken breasts
1 (24 oz) jar chunky salsa. (I use medium. I like the spice, but don’t like my mouth being on fire.)
3/4 cup sugar (optional, if you don’t like sweet things or are diabetic.)
1 1/2 cups rice (brown or white, doesn’t matter. Can even use instant rice.)
1 cup vegetables
1. Set the oven to 350 degrees F. Mix the salsa and the sugar until the sugar is dissolved. Put the chicken in a 2 quart casserole dish. Pour the salsa/sugar mix over the chicken.
2. Cover the casserole dish with aluminum foil (Or if the dish comes with a lid, use that). Bake for 45 – 60 minutes.
3. Make the rice according to the rice directions. 😛
4. Serve with veggies.
