Dinner: Chicken ravioli with vodka sauce by HazelRae Wildrose

1 onion, finely chopped
4 tbs. olive oil
2 cloves garlic, minced
2 cups crushed tomatoes
4 tsp. chopped fresh oregano
1 tsp. dried red chile flakes
1/2 cup homemade or canned chicken or vegetable broth
1/2 cup vodka
2/3 to 1 cup heavy cream
1/2 cup freshly grated parmesan cheese
1/2 cup roughly chopped fresh basil

In a large heavy-based sauté pan, heat the olive oil over medium-high heat. Add the onions and cook, stirring frequently. Add the garlic and cook until fragrant (30 seconds). Stir in the tomatoes, oregano and chile flakes. Add the broth and vodka to the pan and bring to a simmer. Cook stirring frequently, until the liquid is reduced by about half (30 minutes to burn alcohol off). Lower the heat slightly, add the cream and simmer until the sauce has reduced and thickened slightly (2 to 3 minutes). Add the parmesan cheese and stir over low heat just until the flavors meld (1 to 2 minutes). Season with salt and pepper. Sprinkle with chopped basil.

It’s probably fine with any kind of pasta or as pizza sauce. We had ravioli filled with chicken and ricotta cheese.

For the ravioli:
1 cup finely shredded chicken
3/4 cup chopped fresh spinach
3 tablespoons butter, melted
1/4 cup grated parmesan cheese
1/2 cup ricotta cheese
1 teaspoon dried Italian herbs
2 teaspoons garlic powder
salt and freshly ground pepper to taste

Simply combine everything and fill ravioli -> place 1 teaspoon every few cm on the pasta dough sheets, brush edges with water, cover with another sheet and cut in shape.
