Dinner: Chicken Pineapple Skewers – By KittenJen

12-16 wooden skewers, soaked in a water for 30 minutes
1 pound chicken thighs or breasts, cut into chunks
2 cups pineapple chunks (fresh or canned)
1 medium red onion, cut into wedges
1 cup ketchup
1/4 cup soy sauce
1/2 cup pineapple juice
1/4 cup honey
1 tbsp yellow mustard
1/4 cup brown sugar
2 tbsp cider vinegar
3 whole garlic cloves
1 tbsp fresh lemon juice

Skewer the chicken, pineapple, and onion wedges. You can make pretty little skewers by alternating pieces of chicken, pineapple, and onion. Or choose practicality and speed over aesthetics and skewer all the chicken together, the pineapple together, and the onion. The choice is yours.

To make the sauce, whisk together the remaining ingredients (ketchup through lemon juice) in a medium sauce pan over medium-high heat. Bring to a boil, reduce heat to low and simmer for 10 minutes until thickened, stirring occasionally. Let cool slightly.

Meanwhile, heat a grill or grill pan over medium heat.

Reserve half the sauce for dipping. Paint the prepared skewers with the remaining sauce and grill 10-15 minutes until the chicken is cooked through.
