Bread: Apple Banana Nut Bread/Muffin – by KittenJen

When you have a bunch of bananas and apples that need to be devoured ASAP why not make a delicious treat out of them for everybody to enjoy? That’s what I did and this is one delicious recipe, if I do say so myself. You do not need a mixer for this! Just some man/woman power.

– 2 ripe bananas (mashed)
– 2 medium sized apples (diced)
– 1/3 cup butter (melted)
– 3/4 cup sugar
– 1 egg (beaten)
– 1 teaspoon of vanilla extract
– 1 teaspoon baking soda
– 1/4 teaspoon of salt
– 1 1/2 cup of flour

-Preheat oven to 350 degrees
-Mix melted butter in with the diced apples and mashed bananas in a large bowl.
-Mix in sugar, egg and vanilla.
-After the previous ingredients are all mixed, mix in the baking soda and salt.
-Lastly mix in flour.
-Pour mix into a greased 4×8 loaf pan or evenly into muffin pan. Your choice!
-Bake bread for roughly 1 hour. Bake muffins for about a half hour or until edges are golden brown.
