Bread: German Handbrot (stuffed bread) – by Levinia Juneberry

500 g wheat flour (1 lb 2 oz)
1 cube (20 g / ¾ oz) yeast
300 ml warm water (1.26 cup)
300g mushrooms/champignons (10½ oz)
1 onion
300g (gouda) cheese (10½ oz)

mix flour, yeast and water with a bit of salt. let the dough proof for 1 hour.
cut onions and mushrooms and stir-fry with a bit of salt and pepper for 3-5minutes.
roll dough and fill with mushrooms and cheese. form either 8 buns or 2 ciabatta breads.
bake in the oven (180°C / 350F) for 15 – 20 minutes
