Dinner: Rotini Pasta Stir Fry – By Sandee Franizzi

1 half Chicken breast for each person you are serving (example: for four ppl use 2 whole chicken breasts)
Cut into 1 inch thick to 2 to 3 inch long pieces (2.50 cm thick, to 5 cm to 7.50 cm long)
1 to 2 bags of rotini pasta (1 for 1 to 2 servings 2 for 3 to 4 servings)(fusilli pasta)
2 Tablespoon of extra light virgin olive oil
1 to 2 crowns of broccoli (1 for 1 to 2 servings 2 for 3 to 4 servings)
2 to 4 whole carrots (2 for 1 to 2 servings 4 for 3 to 4 servings)
2 Roma Tomatoes
1/2 cup chopped Parsley ( Use Fresh not canned or dried)
4 to 5 pieces of a clove of garlic (pressed or chopped to your liking)

Step 1: Boil pasta (add to water olive oil with 2 teaspoons salt and 1/4 cup parsley) (Usually 1 to 2 cups of water to every cup of dried pasta) Check frequently. Boil until pasta is tender but not mushy. drain.

Step 2: Add 2 Tablespoons and 1/4 cup water to skillet Grill cut chicken over medium fire until done. Add rest of Garlic half way through cooking. (Approx 7 mins in)

Step 3: Add broccoli, carrots. Add 1/4 cup of water and cover. Reduce heat to low and simmer for 5 to 10 mins Until Veges are tender.. Add parsley and pasta and simmer for 2 more minutes. Turn off heat and add tomatoes. Stir

STEP: 4 Serve…
